I don't mind GM fiats to keep players alive.
As a GM I tend towards the "what makes for a better story" mode of thinking.
OTOH, I've also been in a group where the GM said that the encounter was balanced for our level (it wasn't), and then when called out on it he replied "well if you didn't suck so badly, I wouldn't have to cheat to keep you alive"
(for those interested the game was 4th ed D&D, we were 5th level, fighting a 15th level dragon that had its defenses lowered by 2 each, and missing 2 hit dice)

As a gm? I absolutely do it. All the time. Frankly, I'll fudge the dice for story purposes regularly and not tell anyone or point it out. Story > Rules all the time. I've even done it to save a PC's life, stop them from dying to a random, no name mook when a boss fight is coming up.
I personally believe that I'm not here to beat the players, we're here to have fun. Doesn't stop me from killing the heck out of them too though ;)
